I think the automatic transmissions were painted engine color, but if I'm wrong I'm sure someone will be along and correct me. Start the bleeding at the wheel furthest from the master cylinder, doing the wheel closest as the last one. Don't forget to check the fluid often so you don't let it get low and reintroduce air back in again.

I believe the original tops were Orlon, which is NLA but modern pin point pattern vinyl is a reasonable alternative. I believe the parts list identifies the available colors. I'm not aware that the locking cap for a Custom 8 was any different, do you have documentation to that effect? Your best bet will be information that prior owners have collected and passed along to subsequent owners.
