Do you start off in "low" or High?

I start in high. I've actually never used low before.
Can you shift between high and low while the car is in motion? Same as a modern car with automatic transmission?

Shifting from low to high under power is not a good idea. The 1949-1953 Ultramatic wasn't designed for it.

Dead in the road. Power cut out. After a few minutes she will start again. But die after 30 seconds of running.

Fuel pump?? Vacuum?

Carb is getting fuel and engine is trying to turn over. Possible ignition coil? Plugs and wires are new. Distributor was rebuilt 9 months ago.

At a loss to understand what you mean when you say "engine is trying to turn over". Does that mean that it's turning over normally but not starting? Or that it's not turning over normally?

What's the service history of the fuel pump, fuel tank and lines? Have recently have you checked the fuel pump delivery pressure and volume?

Sorry, turning over and not starting.

I have done no service to the fuel system in tha past year that I've owned the car. Done many other services though. But, I can see fuel going into the carburetor.

Care to explain just how you see fuel entering the carburetor? If you have a glass-bowl fuel filter between the pump and the carburetor, just seeing turbulence in the bowl doesn't guarantee that fuel is flowing into the carb, a more definitive test would be to remove the fuel line at the carburetor inlet, and taking care, crank the engine and measure how much fuel is pumped in 15 or 30 seconds. Perhaps that's what you've already done, just looking to be absolutely certain we can eliminate that as a concern.
